These Zucchini Cakes are easy to make and a perfect side dish to grilled chicken or meat.
Recipe type: Side Dish
Serves: Makes 8-10 cakes
  • 2 c. shredded zucchini
  • 1 c. seasoned bread crumbs
  • 1 tsp. Old Bay seasoning
  • 1 Tbsp. mayonaise
  • 1 egg
  • Serve with sour cream or plain Greek yogurt
  1. Place all ingredients in a mixing bowl and stir to combine.
  2. Form the mixture into approximately 4" patties.
  3. In a large skillet, pan fry the cakes for about 4 minutes per side, until browned and heated through. Cook 2 - 3 cakes at a time so that you have room to flip them and so that pan is not overcrowded.
Serve with a dollop of sour cream or plain Greek yogurt.
