Serves: About 12 servings
  • 60 Ritz crackers
  • 1 stick (1/2 c.) of butter
  • 2 small boxes of vanilla instant pudding and pie filling (3.4 oz size boxes)
  • 1½ c. milk,
  • 1 quart of ice cream, softened
  • 8 oz. Cool Whip
  1. Start by crushing up the Ritz crackers: place all the crackers in a large zipper bag and then use a rolling pin to break them up.
  2. Next place butter in a microwave safe dish, cover with a paper towel and microwave until melted, about 45 seconds.
  3. Combine the melted butter and the cracker crumbs in a 9 x 13 baking dish. Press the crackers down to form a crust.
  4. In a large mixing bowl, using an electric mixer, combine the instant vanilla pudding and pie filling mix, the milk and the softened vanilla ice cream.
  5. Spread the mixture on top of the cracker crust.
  6. Finally, spread the Cool Whip on top of the ice cream mixture.
  7. Keep chilled in the fridge until ready to serve.
