Mashed Potato Pancakes. These are one of those things my mom has been making my whole life. She makes them just the way her mom made them. Make them for brunch, lunch or a midnight snack. You’ll love them no matter what time of day!
Mashed potatoes are a comfort food classic and my mom makes the best. She keeps them totally simple and fluffy and they are delicious. So delicious in fact that everyone usually fights over the last spoonful!
But sometimes my mom will make extra and hold back a portion. She hides them from us all! And she does this so she can make us these Mashed Potato Pancakes the next day. It’s always a great surprise because as delicious as her mashed potatoes are, these pancakes just might be even better!
Making Mashed Potato Pancakes
Potato Pancakes are made by adding just a few ingredients to the leftover mashed potatoes. Combine two cups of the potatoes with 1 beaten egg, and 4 to 6 tablespoons of flour and stir until it’s all well mixed.
A Tip!
Add the flour slowly to achieve just the right texture. You will want the mixture to be dry enough that you’re able to handle it and form patties, but not too dry and crumbly. Also, use flour-covered hands to make the patties.
Next melt about a tablespoon of butter into a large frying pan over medium heat, and place the cakes in the pan to fry. Be careful not to overcrowd the pan so you’ll have room to flip them. Allow each side to cook about 3-4 minutes until golden brown and crispy. These are certainly not the healthiest. However, they are worth the splurge once in a while!
Continue to cook the pancakes in small batches, adding more butter in between each time.
Serve warm. Top with sour cream and chopped scallions if desired!

Grew up eating these. My Irish grandmother and mother always made extra mashed spuds so we could have them in pancake form the next day
