Peanut Butter Filled Apple Snack

Peanut Butter is pretty much one of the best foods in the whole wide world. In a sandwich, on a cracker, right off the spoon…  I loved it when I was a kid and I love it now. And one of my favorite ways to eat it when I was little: inside an apple! Let’s talk about the amazingness of Peanut Butter Filled Apples.

This is one of those things my mom would make for my lunch sometimes, and kids at school would go nuts – “That’s so cool!” or “How’d your mom do that?”  And I’d just tell them that my mom was awesome (and she still is, btw!) She’d wrap the whole thing up in foil so the apple would stay all together, and when I pulled it out of my lunch bag, kids would stop and try to guess what in the heck it was! Now when I make these for my kids, they are just as amazed at the coolness of this snack.

It’s really so easy to make these. You just need the apple, peanut butter and an apple corer. You could try to remove the core with a small paring knife – very carefully!!! – but a corer makes it so much easier. (The one pictured below is the one my mom used all those years ago to make my school lunches – vinatge! But if you don’t have an apple corer, get one!)

STEP 1:  After washing and drying the apple, use the corer to remove the center of the apple. I usually like to press the corer through a few times to widen the center and make sure I get out all the core and seeds.

STEP 2: Using a small rubber scraper or butter knife, fill the center with the peanut butter. I do this while holding up the apple…I’ll smoosh some in from the top and then flip it over and smoosh some in from the bottom. I feel like when you’re talking about peanut butter, smoosh is a perfectly appropriate technical term. Make sure to smoosh enough that the two globs (another technical term) meet up in the center…add more globs as necessary.

STEP 3: Place the apple on it’s side on a cutting board, and using a sharp knife, slice the apple into rings. This is when the magic happens!!! Each slice will have that awesome little glob of peanut butter in the center and you and your kids will be amazed, I promise!

A Tip: Back in the day, I learned the best way to eat this bad boy is to hold it together with one hand and SLIDE each slice off so the pb stays in the center. It really stinks when the glob of pb falls out, but then you can just dip the apple ring in said glob of pb.

Ingredients
  • 1 medium apple
  • 1-2 Tbsp peanut butter
Instructions
  1. Wash the apple and remove the core.
  2. Fill the center of the apple with the peanut butter, packing gently.
  3. Slice apple crosswise inot ½ inch slices, to reveal peanut butter center.
  4. Serve or wrap tightly in plastic and chill.

      My oldest child won’t eat any fruit AT ALL! The only thing he’ll eat is applesauce…the picky thing is so tough!
